1.0 tbsp Canola Oil1.0 cup Asparagus, fresh1.0 cup, chopped Carrots, raw0.5 cup, diced Celery, raw1.0 medium (2-1/2" dia) Onions, raw10.0 small (1-3/4" to 2-1/2" dia.) Potato, raw1.0 cup, sliced Zucchini74.0 gram(s) bell pepper, red, sweet, raw7.0 cup Swanson Chicken Fat Free Chicken Broth Less Sodium4.0 serving Great Value Instant Mashed Potatoes (1/3 cup)
Dice all veggies & add to stockpot. Saute in canola oil. Add diced potatoes. Add chicken broth and instant mashed potatoes. Simmer until vegetables & potatoes are tender. Season with garlic salt & pepper to taste.
This can also be made in a crockpot.
Served with whole grain bread & molasses.
