1 sweetpotato, 5" long Sweet potato 2 medium (2-3/4" dia) (approx 3 per lb) Apples, fresh with skin 2 large Egg, fresh, whole, raw 1 large Egg white, fresh 0.5 cup Coconut milk (light) 1 tsp Vanilla Extract 1 tsp Cinnamon, ground 1 tsp Nutmeg, ground 0.25 serving Maple Syrup - Maple Grove Farms Pure Maple Syrup (1/4 cup) 1 oz (20 halves) Pecans 0.3 cup (not packed) Raisins
Peel and Shred raw sweet potato and apples. Sauté until soft and starting to brown. Whisk eggs, coconut milk, and the rest of the ingredients. Add wet mixture to sweet potatoes and apples, stir, and transfer to baking pan. Bake at 400 for 10 min.
