Broccoli Chicken Quinoa Casserole

Ingredients
16 ounces Chicken Breast (cooked), no skin, roasted 1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 0.5 cup Flour, white 3 tsp Mrs. Dash (R) Lemon Pepper Seasoning Blend 1 package (2 lb) Broccoli, frozen 5 oz Cabot Seriously Sharp Cheddar Cheese 3 cups of water separated8 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable
Directions
Bring 2 cups water, 1tsp of seasoning and 4oz of milk to a boil. Mix flour and 1 tsp of seasoning together and add to boiling mix until creamy and smooth gravy In a large bowl mix 1 cup of water and 1 cup of dry Quinoa, add hot gravy and stir. Slice chicken breast into small long strips and marinate with 1 tsp seasoning Grease a 9x11 Pyrex Add hot Quinoa mix to Pyrex and add chicken on top - bake for 30-45min until mix is thick and Quinoa has popped out. While baking prepare the broccoli, for frozen broccoli microwave until just thawed. Add the broccoli to the Quinoa mix and stir together - top with shredded cheese and bake for 5-8 more minutes, or until the cheese has melted. Serving Size: Makes 6 servings
