thai green curry

Ingredients
4 chicken breasts approx 125g each1 red onionlots of garlic, gingersoy sauce and sweet chilli sauce to taste1tbsp thai green curry powder or paste1 can coconut milk approx 400g1 thinly sliced green pepperlime leaves and lime juicethai fragrant rice
Directions
serves 4
(for best results cook night before, then reheat next day)
fry onions, garlic, thai paste, ginger and pepper
add the coconut milk, bring to boil then simmer
add the soy sauce and sweet chilli and any extra red chillis if using
squeeze in the lime and crush in the lime leaves
leave to simmer and thicken
i always keep tasting and keep adding extra lime or sweet chilli or soy etc to your personal taste, until you get the right balance for you.
serve with just under a cup of rice per person.
