Roast Eye of Round (Lean)

3-4 lb. Eye of Round RoastDry Rub seasonings (purchase any brand)(I make my own Season Salt and rub with that.)2 Tblsp. A. P. FlourOven roasting Bag
Wipe off meat with damp paper towel. Rub with your favorite rub. Place in Oven Bag. Dust bag and roast with the flour (so bag won't explode)
Preheat oven to 500 F. (Yes 500!) Place roast in roasting pan and into hot oven. Set Timer for 5 minutes (yes 5 min.) per lb. 15 to 20 min roasting time is for a 3-4 lb. roast. Add 5 min. for each additional lb. of meat. Turn oven off. DO NOT open door!!
LEAVE IN OVEN FOR ONE HOUR - (1) hour.
Remove, and allow to rest for 10 min. Save juices from bag. (If desired - for those not counting calories, a delicious gravy can be made from the meat juices.) Slice roast thinly and serve, using au 'jus (or gravy), over the potatoes or rice, if desired. Moist and tender when thinly sliced.......Yummm!
You'll want to make this one again......... and again!

Well, I tried making this recipe for early dinner today and it didn't work out at all for me. Using the directionds precisely and my roast was 2.5 lbs. also when it was done the inside measured only 120 degrees. I threw it into the corckpot with a jar of gravy and am cooking it on high for 4 hours . - 9/6/10
