Mac's Vegetable soup low sodium

1 cup, chopped Carrots, raw 2 cup, chopped Broccoli, fresh 1 cup, pieces or slices Mushrooms, fresh 4 clove Garlic 1 tbsp Extra Virgin Olive Oil 14.5 oz Diced, Peeled Tomatoes in Tomato Juice (No Salt Added) (by BROOKELISE) 1 cup Campbell's low sodium chicken broth 4 cup simple truth organic low sodium free range chicken broth (by CALLIERAYNE_) 4 cup, chopped Cabbage, fresh 4 cup (8 fl oz) Water, tap
Sauté onions, garlic and mushrooms in 1 tbl spoon of Olive oil.
Add remaining ingredients and bring to boil. Reduce heat to low cook until desired consistency. I do this in a crock pot with High setting to sauté then add rest of ingredients and cook on low for approximately 6-8 hours. But....I prefer cooked soft vegetables.😊
