Ingredients
3.0 clove Garlic1.0 tsp Ginger Root1.0 cup, chopped Kale0.5 cup, chopped Onions, raw1.0 cup Chickpeas (garbanzo beans)4.0 cup Imagine Organic Vegetable Broth1.0 cup Del Monte Diced Tomatoes, No Salt Added1.0 cup Milk, SO Delicious® Coconut Milk, unsweetened, 1 cup serving2.0 serving sweet potatoes ( great value organic)1.0 tsp tumeric
Directions
Dice onion, chopped ginger and garlic and saute. Add sweet potato cut into bite size pieces Add seasoning to taste Add vegetable broth and simmer for 30 minutes Add rinsed chickpeas and chopped kale (stems removed) simmer for 20 min Add coconut milk and stir Serve over brown rice or quinoa Serving Size: Makes 8 one cup servings
