Low Fat Rhubarb Blueberry Muffins

Ingredients
1 1/4 c. brown sugar1/2 c. unsweetened applesauce1 egg2 tsp vanilla1 c. lowfat buttermilk1 1/2 c. rhubarb, diced1 c. blueberries2 1/2 c flour1 tsp baking soda1 tsp baking powder1/2 tsp saltOptional - 1/2 c. nuts (not figured in nutrition)Topping:1 TBS melted butter1 tsp cinnamon1/3 c. sugar
Directions
Mix all ingredients until moistened. Put in muffin cups and sprinkle each muffin with topping mixture. Bake 20-25 minutes at 375 degrees. makes 24 regular size muffins or 12 jumbo size.

    Wow! 236 calories for a jumbo muffin is AWESOME! I work in a grocery store and we did the "Live Healthy America 100 day challenge" so I made them give us the calorie count etc for the muffins we sell, they only gave us the blueberry ones but they had almost 700 calories each! - 6/12/08
