Banana-Egg Pancake

Ingredients
1 banana, mashed1 egg, beaten2 Tbsp Brown Rice Flour1 tsp Olive Oil (give or take accordingly)
Directions
Mash Banana, add beaten egg and mix well add flour and beat again. Heat oil in skillet on stove. I don't have a non stick so i have to use a little extra oil... and fry as you would regular pancakes.
Serve with syrup. Makes 3 pancakes for 1 Serving.

I've tried this with flour and without - they stay together with the flour a little more, but they are just as good without it - albeit not real pretty.
