Roasted Veggies at Home

Ingredients
1.25 cup, sliced Summer Squash 1.25 cup, sliced Zucchini 5 slice, large (1/4" thick) Onions, raw 2.5 cup Bell peppers (Green, Red, Yellow, Orange) 2 tbsp Extra Virgin Olive Oil .5 tsp Salt .25 tsp Pepper, black Chop bell peppers into 1 inch pieces. Cut onion slices in half.
Directions
Preheat oven to 450. Spread chopped vegetables among large baking sheets covered in parchment paper or foil lined pan liner paper. Drizzle 1 TBSP of the oil on vegetables in EACH pan. sprinkle with salt and pepper. Cook for 12 min. Flip/stir/turn. Sprinkle more S&P if desired. Roast an additional 10-12 min.
