Kale fennel stew

Ingredients
1.5 cup, chopped Onions, raw 1 cup, sliced Fennel 2 serving Garlic - minced (1 tsp) (by ELLERCADE) 1 cup, chopped Carrots, raw .75 cup, chopped or sliced Tomatoes, red, ripe, raw, year round average 0.20 cup Tomato Paste 2 cup, chopped Kale 5 sprigs Dill weed, fresh 1 tsp, crumbled Bay Leaf 2 tbsp Olive Oil 1.5 cup Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, with salt
Directions
Heat oil in pot, add onions and fennel. Sauté until soft. About 8 minutes
Add garlic and sauté for a few seconds.
Add all other ingredients except kale. Simmer for 50 minutes.
Add kale and cook for 5-10 minutes until kale is soft.
