4 small (3" long) Scallions, raw 2 cup Spaghetti Squash 2 large Egg, fresh, whole, raw 2 cup 365 Organic Quinoa 2/3 cup Bob's Red Mill Coconut Flour .5 cup cheese, Kraft Italian 5 cheese blend.5 cup Parmesan Cheese, grated
Heat waffle iron. In a medium/large bowl beat eggs, add flour, combine. Next, add spaghetti squash, quinoa, cheeses, scallions. Add hot sauce at this point, according to taste. (Add to calorie count). Mix until fully combined.
Once the waffle iron is ready, spray with non stick cooking spray. Drop a 1 tbsp measuring spoon of mixture onto each waffle square, close lid. Cook 4 min. They should be perfectly crisp around the edges. Add more time to suite your preferences.
Use a rubber spatula to easily lift the fritters. Serve with sour cream & extra scallions. Enjoy❤️
