Goat Cheese Spinach Meatloaf

1 large Egg, fresh, whole, raw 4 oz Goat Cheese, Soft 1 tsp Pepper, black 1 tsp Salt 2 1tsp Olive Oil 1 cup Spinach, fresh 0.25 cup Bread crumbs, dry, grated, seasoned 2 tbsp Ketchup, Heinz 16 oz Beef, 90% Lean Ground Beef from Sirloin 1 tsp Oregano, ground 1 tsp Thyme, ground
1. Preheat oven to 350 degrees
2. Mix beef, egg, bread crumbs, ketchup, spices and egg in a bowl
3. Roll meat out into a 1/4in square
4. Line one edge of meatloaf with goat cheese slices
5. Top cheese with spinach
6. Fold meatloaf over and pinch edges together to close
7. Put meatloaf in oven safe dish and cover
8. Bake meatloaf and potatoes for 45 min, uncovering at 30 min
