5 serving Corn on the Cob, fresh med. ear 2 cup, chopped Onions, raw 9 serving Irish Potatoes, boiled (no salt no butter) 1 potato 2 tbsp Extra Virgin Olive Oil 10 cup Kitchen Basics Vegetable Stock (by EVERYBODYRISE) 1 clove Garlic
Boil potatoes. Reserve 2 cups potato water when you drain. Grill corn until slightly charred. Remove kernels and scrape cobs to express "corn milk." Saute onions and garlic in olive oil until onions are soft. Add half the potatoes, half the corn, and 10 cups of vegetable broth. Use a stick blender to puree. Season with salt, pepper, cumin, and smoked paprika. Add remaining potatoes and corn. Add more seasoning if necessary. Let simmer 20 minutes. Serve.
