4.0 serving Chicken - Boneless & Skinless Breast (4 ounces)2.0 tbsp Extra Virgin Olive Oil240.0 Grams Mushrooms, fresh0.25 cup Butter, unsalted2.0 clove Garlic0.1 cup Flour - Gold medal all purpose flour0.5 cup (8 fl oz) Chicken Broth1.0 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream0.5 cup Parmesan Cheese, grated1.0 cup Spinach, fresh
1) In a large skillet add olive oil and cook the chicken until lightly browned and cooked through. 3 to 5 minutes. Remove chicken and place on plate. Add sliced mushrooms to pan. Cook until tender. Remove from skillet and set aside.
2) Add the butter to the skillet and melt. Add garlic co oking until tender. Whisk the flour into the mixture until smooth. Whisk in the broth, heavy cream, parmesan cheese, and garlic powder. Add salt and pepper if desired. Add spinach. Simmer until it wilts.
3) Return the chicken and mushrooms to the pan. Heat for a couple minutes.
