Curried asparagus and olive quiche

Ingredients
1 Tbsp olive oil1 cup chopped onion2 cups asparagus, in 1" lengths4 Tbsp black olives, roughly chopped4 eggs, beaten2 cups grated mature cheddar1/4 tsp salt1/8 tsp pepper1/8 tsp nutmeg1/8 tsp red pepper (or to taste)1/4 tsp curry powder1 medium tomato, sliced
Directions
Saute onion in oil until translucent. Add asparagus and cook 2 minutes. Mix in olives.
Meawhile beat eggs in large bowl. Add all spices and cheese and mix well. Add asparagus mixture and mix well.
Spray a 9" pie plate and pour quiche mixture in, spreading evenly. Top with slices of tomato.
Bake in 350 oven for about 30 minutes or until centre has set.

    That was super yummy! I doubled the eggs, used pam instead of oil and added a red bell pepper and it made 2 pie pan quiches! I didn't have any tomatoes so i cut up another red bell pepper into 1/4" wide circles and placed them on top. Beautiful! I am definately making this again! - 8/26/08
