Not your Mama's Tuna Salad

Ingredients
Mixed Salad Greens ( I like mesculin or baby spinach)Mandarin oranges (canned work well)Ruby Red Grapefruit, peeled & sectionedFresh Tuna Steak3 tbs olive oil1 tbsp fresh lemon juice
Directions
Grill Tuna steak until just seared on each side. You want it still kind of rare in the center.

Lightly toss citrus fruit & some of the juices with the salad greens. Reserve some fruit juice for dressing.

Cut the grilled tuna into thich slices or bite sized cubes and place on top of the salad.

mix olive oil, lemon juice and a little of the citrus juices and pour over the greens and fish.

    Sounds good! I eat canned tuna over salad greens all the time with just a squeeze of lemon juice as the "dressing". I'll try this, I'm sure it's delicious! - 7/29/09
