Low Sugar Cranberry Orange Muffins

1.5 cup, whole Cranberries 2 cup Flour - Gold medal all purpose flour 1 tsp Salt 3 tsp Baking Powder .5 cup Granulated Sugar .66 cup Orange Juice 0.33 cup Canola Oil 2 large Egg, fresh, whole, raw 1 tbsp Lemon Peel
Preheat oven to 350F.
In a large bowl, combine flour, sugar, salt, baking powder and lemon zest.
Create a well in the middle of dry ingredients to combine orange juice, eggs, and oil before mixing all ingredients together until just combined.
Fold in cranberries.
Line 24 muffin pans with paper cups for easy clean up. Fill 2/3 full with bread batter. Bake for 20 minutes or until cooked thoroughly and a toothpick can be inserted in the middle and comes out clean. Tops will be golden browned.
So tart for those that like less sugar. =)
