Spinach & mushroom omelette

Ingredients
1 tbsp Rapeseed oil1 cup Mushrooms - sliced1 tsp smoked paprika1 spring onion - sliced2 large eggs - beaten1 large handful Spinach - chopped1 tbsp Parsley - finely choppedSalt & Pepper
Directions
Fry off the mushrooms, turn the heat down to medium then add smoked paprika & spring onions. Pre mix the remaining ingredients. Fold in half and serve once the egg is cooked
