Spinach Mushroom smoked paprika omelette

Ingredients
2 large Egg, fresh, whole, raw 1 tbsp Rapeseed oil 1 cup, pieces or slices Mushrooms, fresh 1 medium (4-1/8" long) Scallions, raw 0.5 tsp Smoked paprika 1 cup Spinach, fresh 1 tbsp Parsley 0.25 tsp Salt 1 dash Pepper, black
Directions
Fry off the mushrooms, then the spring onions and smoked paprika. Mix everything else in a separate bowl. Pour over, cook & fold.
