Cheesy chicken broccoli cauliflower rice casserole

1 package skinless boneless chicken thighs (simple truth)1 can Campbells Cheddar Cheese Soup1 cup, chopped Onions (red or white)1 large package broccoli florets12 oz bag Green Giant Riced Cauliflower1 Pillsbury crescent dough sheet 5 oz Cheddar Cheese, Kroger extra sharp, grated8 tbsp Butter, unsalted
Boil chicken until cooked through. Chop into small pieces.
Sauté onions in butter or olive oil until see through
Add broccoli until warmed throughout
Add to greased 9x13.
In same skillet, add more butter or oil with warm riced cauliflower, soup, and half of the cheese. Let simmer for a few minutes, until melted.
Add chopped chicken to broccoli mixture. Mix well. Then top with cheese and cauliflower. Mix well again. Stir in the rest of the cheese.
Bake at 350 for 20-25 minutes.
Meanwhile, cut the crescent dough sheet into 8 long strips. Cut 4 of those in half lengthwise. After 20-25 minutes, take casserole out and weave dough into a lattice on top. Bake another 10-12 minutes, until dough is brown.
