1# firm tofu, sliced into medium-thin noodle-like strips1 26-oz can Hunt's No Sugar Added Spaghetti Sauce1 cup fresh spinach1 cup sliced fresh mushrooms½ cup sliced zucchini or yellow squash½ cup red bell pepper strips¼ cup fresh Parmesan or Romano Cheese½ tsp basil8 ounces ricotta cheese1 cup provolone cheese½ cup mozzarella½ cup sharp white cheddar (or other sharp cheese)
Toss vegetables with Parmesan cheese and basil.
In a lightly greased 9X9 glass dish layer:
1/3 of spaghetti sauce
1/2 of tofu
1/2 of veggies
1/2 of ricotta
1/3 of cheese
1/3 of spaghetti sauce
1/2 of tofu
1/2 of veggies
1/2 of ricotta
1/3 of cheese
1/3 of spaghetti sauce
1/3 of cheese
Bake in 375 degree oven for 30 – 45 minutes. (Because of the tofu and veggies, it may be necessary to drain excess liquid after about 20 minutes and then finish cooking.)
Allow to sit for a few minutes before serving. Cut into 9 pieces.
