0.5 cup Butter, salted0.5 cup Buttermilk, lowfat2.0 large Egg, fresh, whole, raw1.0 tsp Cinnamon, ground0.5 tsp Salt1.0 tsp Vanilla Extract2.0 medium (7" to 7-7/8" long) Banana, mashed0.5 cup, chopped Pecans2.0 tsp Baking Soda48.0 tsp Splenda150.0 gram carbalose flour
1. Preheat oven to 350 degrees. Grease a 9x5 loaf pan.
2. In a large bowl, stir together melted butter and splenda. Add eggs and vanilla, mix well. Combine the flour, baking soda, and salt, stir into the butter mixture until smooth.
3. Finally fold in the sour cream, mashed bananas, and nuts. Spread evenly into the prepared pan.
4. Bake at 350 degrees for 60 minutes, or until a toothpick inserted in the center of loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
NOTE: I substituted buttermilk for the sour cream because I was out of sour cream. Still really good.
