For the dressing: 1 Tbs soy sauce1/2 Tbs mayonnaise1/2 Tbs dijon mustard1/2 Tbs honey1/2 Tbs finely minced fresh ginger root1 tsp rice vinegar1/4 tsp sesame oil1/4 tsp fish sauceFor the salad:1 cup frozen shelled edamame1/2 English cucumber, halved, seeded and sliced in half rounds2 oz shredded carrots1/2 cup fresh cilantro2 green onions, mostly greens, chopped
Cook edamame according to package directions. Rinse with cold water and allow to cool.
Combine soy sauce, mayo, mustard, honey, minced ginger, vinegar, sesame oil, and fish sauce. Whisk well. Toss with edamame, cucumber, carrots, cilantro, and green onions.
