Jo's Oatmeal Choc Chip Cookies

Ingredients
1/2 cup Butter, salted 1/2 cup packed Brown Sugar 1/4 cup Granulated Sugar 1 large Egg1 tsp Vanilla Extract 3/4 cup Flour1/2 tsp Baking Soda 1 tsp Cinnamon, ground 1 dash Salt 1 1/2 cup dry Oatmeal (plain)1/2 cup Cocoa Nibs
Directions
Cream butter and sugars. Gently beat in egg and vanilla until blended. Mix together remaining dry ingredients except for oatmeal and nibs. Blend into wet ingredients. Combine nibs and oatmeal then add to cookie batter. Spoon into 12 balls in parchment paper in a cookie sheet.
Bake at 350F for 12-15 minutes, allow to cool on sheet for 5 minutes. Store in airtight container.
