Ingredients
386 gram Squash, Summer (Zucchini & Yellow) 1 cup 127 grams Green Beans (snap) 185 gram Peppers, sweet, mini (Pero Family Farms) - 3 peppers/85g 1 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 425. Roast until the vegetables are tender enough to pierce with a fork and you see some charred bits on the edges. Softer vegetables cook more quickly, while harder vegetables like potatoes will cook more slowly. Smaller pieces will also cook more quickly than larger pieces.
