Zucchini and Summer Squash Medley

Ingredients
2 baby zucchinis, sliced and cut in quarters1 yellow squash, sliced and cut in quarters1 large onion, cut in chunks1 large tomato, cut in chuncks3 tbsp of butter, separated
Directions
Place the cut up squashes in a large saute' pan and add onion and tomato pieces on top. Cover and steam for about 12 minutes. Add the three pats of butter and salt and pepper to taste and let the squash cook for about 3 more minutes or until tender. Serve hot and can be served over pasta instead of sauce or as a side dish. I like this with mushrooms added also.
Sprinkle with ground flax seed if you would like more fiber.
