B's Tomato Zucchini Salad

Ingredients
3 cups shredded zucchini1 cup chopped tomato1/4 cup chopped onion1/4 cup olive oil1/4 red wine vinegar2 Tbls. parsleysalt and black pepper to taste
Directions
Combine all ingredients in a bowl, let set in fridge at least one hour or longer before serving. Makes 8-1/2 cup servings.

    Yum! Easy to fix. Make it first, and let it chill while you are making dinner. Substituted Green Onions for onions and also added chopped button mushrooms. Think it would be great with chopped red bell pepper too. Thanks! - 8/24/08
