Tuna Mornay

Ingredients

1 can of tuna300 mL of skim milk2 tbsp margarine2 tbsp of flour150 g of grated cheese1 small onion, finely chopped1 tbsp lemon juice1 tbsp freshly chopped parsley1 cup of mixed vegetables (peas, corn, carrot) frozen or cannedpinch of chilli powderpinch of paprikasalt and pepper to taste
1. Melt butter in a medium heat frying pan.
2. Add onion and fry until tender.
3. Remove pan from heat and add 2 tbsp of flour
4. Return to a low heat and simmer for a few minutes
5. Remove frying pan from heat again and stir through milk.
6. Bring mixture to the boil to thicken.
7. Once mixture has thickened add cheease and stir until melted through.
8. Add drained tuna, lemon juice, chilli powder, paprika, parsley and vegies.
9. Heat thoroughly.
10. Season to taste
*Optional - Place mixture in a small casserole dish and top bith breadcrumbs and grated cheese. Bake in a 200 degree celcius oven for 5 minutes.
Serve with vegies or rice.
