Veggie Bake for 1

Ingredients
1/2 medium tomato, diced1/4 bell pepper, diced1/2 small onion, finely chopped1/2 carrot, diced1 garlic clove, finely chopped1/4 tsp paprika1/4 tsp basil1/4 tsp black pepper1 tsp parmesan cheese1/4 cup Vegetable Juice
Directions
1. In a non stick fry pan melt one butter and fry onion till tender.
2. Add bell pepper and carrot and fry for a few minutes
3. Add garlic, tomato, paprika, basil, pepper and lemon juice.
4. Add vegetable juice and heat until vegetables are tender.
5. Transfer ingredients to a oven dish and sprinkle parmesan on top
6. Bake in a medium oven for 20 minutes and serve hot, garnished with fresh herbs of your choice!
