Crustless Sausage Quiche

Ingredients
12 large Eggs, fresh, whole, raw 1 serving LaRosa's Red Onion Slices (14 g) 2 cup, pieces or slices Mushrooms, fresh 3 tbsp Extra Virgin Olive Oil 12 patty, cooked (raw dimensions: Pork Sausage 1 cup Spinach, frozen
Directions
Cook 1 lb sausage in skillet. I used hot italian from Sprouts. Remove. Saute onions, Mushrooms, and spinach in skillet until onions are translucent. Remove. Spoon sausage mushroom mixture into greased muffin tins. Beat eggs in a separate bowl adding any spices that you would like. Spoon eggs over the meat mixture. Bake in 350 degree oven for 30 minutes or until firm.
