2.0 cup Flour - Gold medal all purpose flour0.25 cup Whole Wheat Flour1.0 cup, unpacked Brown Sugar1.5 tsp Baking Powder0.5 tsp Baking Soda1.0 tsp Cinnamon, ground1.0 tsp Salt3.0 large Egg white, fresh2.0 tbsp Butter, salted0.75 cup Yogurt Plain Greek Yogurt, non-fat1.0 tsp Vanilla Extract2.0 cup, mashed Banana, fresh0.5 cup, chopped Walnuts
Combine flowers and next 5 ingredients in a bowl. Set aside.
In a medium Bowl beat egg whites and butter and yogurt and vanilla with a whisk until smooth. Add bananas and whisk again.
Add banana mixture to flour mixture. Stir until dry ingredients are moistened. Stir in walnuts.
Spray 9 x 5 inch loaf pan with non-stick spray. Pour batter into pan. Bake for 1 hour and 20 minutes or until toothpick inserted in Center comes out clean. Remove from pan and let cool.
Makes one large loaf with 16 slices. Make sure you use a loaf pan that is 9 inch x5 inch. If you use a smaller pan the outside of the bread will burn before the inside is cooked.
