2 tbsp Olive Oil 1 cup, chopped Onions, raw 2 clove Garlic 1 serving Jalepeno Pepper- 1 pepper (by SRATERMAN) 4 serving Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup 8 oz boneless chicken breast - raw (by KATHYMD0518) 0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
1. Saute onion, garlic and jalapeno in olive oil. Add 1/2 tsp ground cumin, 1/2 tsp paprika, 1/2 tsp salt, 1/2 tsp pepper
2. Add broth & chicken breasts, bring to a boil. simmer until chicken is done. Remove chicken & shred apart
3. Add 2 diced tomatoes, juice of 2 limes and 1/2 cup quinoa. Simmer until quinoa is tender
4. Serve with garnishes such as diced avocado, scallions, minced cilantro, sour cream
