5 large Egg, fresh, whole, raw .5 medium (2-1/2" dia) Onions, raw 1 serving Mini Sweet Bell Peppers (3 peppers to a svg) 1 cup Spinach, fresh 1 tbsp Butter, salted 2 tbsp Parmesan Cheese, shredded
Sautéed onion and peppers and spinach. Add beaten eggs to cast iron pan on medium heat. Cook till eggs are almost set, sprinkle with cheese and put in 400 degree oven for 10 min or until done.
