Easy & Spicy Rice with Black Beans

Ingredients
1 Can Rotel, (diced tomatoes with green chilies) undrained1 Can Black beans, drained & rinsed1 Cup Brown Rice or White Rice1 Cup Water1 Cup Chicken Broth (or 2 chicken bouillon cubes plus 1 Cup water)1 tbsp Garlic PowderSalt & Pepper to taste1 tbsp Olive Oil1 Serrano Pepper, diced
Directions
Place all ingredients in a medium to large sauce pan. Bring to a boil, stir, cover and simmer for 14 minutes (or the time specified on the rice package).
Optional- sprinkle each serving with lowfat cheddar cheese and chopped green onions.

Makes 4 1-cup servings.
