Cheese Stuffed Pork Burgers (South Beach)

Ingredients
- 5 Tbs. Pesto Sauce- 1/2 tsp. salt- 1 tsp pepper- 1 1/2 lbs. lean ground pork- 2 oz. low fat mozzarella, cut into 4 cubes (you can also ball up slices at room temp)
Directions
Make 4 burgers. More filling and easier to top if using large lettuce leaves to eat.

1) Mix pesto, salt, and pepper in large mixing bowl
2) Add pork and mix but not overly so
3) Shape into 4 equal balls
4) Press cube or ball of cheese into each ball and form into a slightly flatter patty around the cheese
5) Use only a touch of cooking spray on non-stick skillet, heat to medium
6) Cook burgers through about 7 minutes per side.
7) Drain on paper towels (lots of olive oil will come out from pesto)

Top your burger wrap with grilled onions, grilled bell peppers, etc. Reduced fat mayo is good too, but not really needed. These have so much flavor.

    Wow this burger is fabulous, I used a part skim mozzarella cheese string for the center it was perfect melted slow.

    Made these tonight. Great! Even the kids ate all of it. Will try it with turkey next time. Pesto seemed to leave pork REALLY loose. Think that was my fault, only 1lb pork, and didn't adjust pesto. Would have liked the cheese to melt more thoroughly. Had SB mashed potatoes and a salad. Wonderful meal - 3/28/11
