BAKED HALIBUT WITH PARMESAN BREAD CRUMBS

6 halibut steaks, 1 inch thick (6 oz. each)Salt to tasteFreshly ground black pepper to taste1/2 c. dry bread crumbs2 cloves garlic, minced1/4 c. olive oil1/4 c. Parmesan cheese1/8 tsp. dried thyme, crumbledLemon wedges
Place steaks in an oiled shallow baking pan. Sprinkle with salt and pepper. Combine bread crumbs, garlic, oil, cheese and thyme to a thick paste and pat onto surface of steaks. Bake in a preheated 450 degree oven for 14 minutes per inch of thickness of fish or until fish is not longer translucent when tested with a fork. Garnish with lemon wedges and serve.

This recipe is marvelous. We loved it and will do it again soon. I did not make the paste but put the olive oil on the fish then mixed the crumbs, cheese, garlic powder, salt and pepper together. Spread the blend on both sides of the fish and baked for 14 minutes at 400 degrees F. It was perfect. - 8/25/11
