Cook Chicken Breast with Black Beans and Taco Seasoning. In hindsight, I would have also cooked with diced onion.
I topped with Cheddar Cheese, Sour Cream and Baked Doritos. Individually portioned, so did not add to the recipe. Recipe makes enough for 4.
