Homemade Avocado Oil Mayonnaise

Ingredients
1 c. Avocado Oil 1 large egg 1/2 fresh lemon, juiced 1 tsp Mustard (dijon or yellow)pinch of kosher salt
Directions
Put egg, lemon juice, salt, and mustard into a wide mouth pint jar. Place the immersion blender in the bottom of the jar and blend on high. While still running on high, slowly drizzle in the avocado oil, moving the blender up and down as needed to incorporate the oil, for a total of 1-2 minutes, until all oil is fully emulsified. Taste, and add more lemon juice or mustard if needed. Place lid on and store in the fridge, up to 2 weeks.
