Rich Chocolate Muffins

Ingredients
1/2 cup Milk (OR yogurt OR sour cream)1 large Egg 1 tsp Vanilla Extract 1/4 cup Olive Oil 3/4 tsp Baking Powder 3/4 tsp Baking Soda 1/3 cup Special Dark Cocoa1/2 cup Tapioca Flour 1/2 cup Almond Meal/Flour 1/2 tsp Salt 1/4 cup Brown Sugar, unpacked 1/2 cup Boiling water
Directions
350 degrees * Muffins 20-22 min.; cake or loaf pan 30-35 min.
Combine dry ingredients, stir in eggs, milk, oil, and vanilla; beat for 2 min. Stir in boiling water ( batter will be thin ).
*spray pans liberally with cooking spray
Serving Size: makes 12 muffins
