Spicy Sausage and Chick Pea Soup with Garlic Oil

Ingredients
.25 cup Olive Oil 6 clove Garlic or 3 tsp chopped in oil16 oz Spicy Italian Sausage (by JTOLLEFSON) 1 lb1 cup, chopped Onions, raw .5 cup, diced Celery, raw .5 cup, chopped Carrots, raw 4 cup (8 fl oz) Chicken Broth 15 oz Tomatos-canned, crushed (by JHGENJR) .5 tsp Pepper, black 4 cup, chopped Kale 2 cup Chick Peas 1 can
Directions
Cook oil and garlic in large saucepan over medium until garlic begins to brown. Remove and discard garlic; reserve 3 TBS of garlic oil.

Increase heat to med high. Add sausage to pan, cook stirring until brown. about 6 mins. Remove and drain on paper towels.

Add onion, celery, and carrots to pan, cook until slightly tender, about 4 mins.

Stir in broth, tomatoes, chickpeas, and paper.

Stir in sausage, bring to simmer. Reduce heat to med/low for 20 mins.

Stir in kale, cook until wilted about 5 mins.

Serve with a drizzle of reserved garlic oil.
