2 pounds pork tenderloin, trimed of fat and cut into 1 1/2" cubes1 large onion, chopped28 ounce can diced tomatoes, with their juices14.5 ounce can fat-free chicken broth1 1/2 pounds yams, about 3, peeled and cut into 1" cubes16 ounce package frozen corn2 bay leavessalt and pepper to taste.
Coat a non-stick skillet with non-stick spray. Over medium heat, brown the pork (about 5-7 minutes).
Add the onion and cook until tender. Add all the remaining ingredients. Bring to a boil. Reduce heat and simmer until the pork and yams are tender. About 45minute-1 hour. Remove bay leaf and discard.
