Ingredients
1 lbTurkey, Ground turkey, 93% lean1 medium Onions, chopped 1/2 cup White Rice, cooked1 lb poblano peppers1 cup shredded cheddar jack cheese5 large eggs1/3 cup flour1 tsp Salt1 cup Milk 1 cup Tomato Sauce1 tsp Mexican oregano2 clove Garlic, grated2 cube Chicken bouillon
Directions
Saute onion is olive oil for 5 minutes. Add turkey and brown. Drain and set aside. Set oven to broil with rack 2nd from top. Remove tops of peppers, cut in half, remove seeds and ribs. Place on foil lined cookie sheet and broil for about 5 minutes or until skin is black and bubbled. WATCH CLOSELY! Put in bowl, cover, and set aside for 10 minutes. Peel skins off and chop. Set aside. Heat tomato sauce in small pot. Add salt, Mexican oregano, garlic, chicken bouillon, and hot sauce if you prefer. Cook about 10 minutes and set aside. Beat eggs in large bowl. Add milk and mix. Whisk in flour. Pam spray 2 qt baking dish. Layer cheese, turkey, then peppers. Repeat x 1 so there are 2 layers. Pour tomato sauce over all first, then pour egg mixture over it. Add more cheese on top. Bake for about 50 minutes at 350 degrees or until center is set. Serve. Tips: trade the cheddar jack for pepper jack cheese for more kick. You can also add a jalapeno or 2 to the turkey mixture for more kick as well. Do not add any taco seasoning! The lead flavor in this dish should be the poblanos. Any additions could mask their delicious flavor. Mexican oregano tastes a little different than regular oregano, but if you don't have any, regular will do. You can substitute beef for the turkey, but the nutritional values will change. The only thing that can make this taste better is MORE poblanos. Use 2 lbs if you wish!

When broiling the peppers, they should be skin side out. I forgot to say that. - 2/19/18
