Ingredients
2.0 tbsp Salt1.0 large (8-1/4" long) Cucumber (peeled)3.0 medium (4-1/8" long) Scallions, raw3.0 cup Parsley2.0 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average2.0 serving Lemon, fresh squeezed, juice of one whole lemon0.5 cup Bulgur Wheat1.0 tbsp Mint, fresh
Directions
Place bulgur wheat in large bowl, pour lemon juice over, then layer with: finely diced tomatoes including their juice, finely diced peeled cucumbers, finely diced scallions - white & green parts, finely chopped parsley - stems removed, 3 sprigs of mint finely diced. Mix with hands. Add salt to taste. Refrigerate for several hours until thoroughly chilled. Serving Size: 1 cup servings
