Vegan Indian Rice Pudding

Ingredients
1.0 tsp Cardamom, ground0.5 cup, packed Raisins1.5 cup Brown jasmine rice, dry, Trader Joe's3.0 cup Thai unsweetened coconut milk2.0 tsp Trader Joe's organic coconut sugar
Directions
Mix all ingredients in a medium sauce pan. Stir and bring to a simmer. Turn to low stirring regularly so the rice doesn't stick for up to 20 minutes...when the rice is soft and the liquid mostly absorbed. Adding water if needed. I used 8 green cardamom pods not powdered. Remove pods and sweeten further if desired. Top with coconut almond slivers or both. Serving Size: Generous half cup
