Chickpea Banana Bread - Gluten free

Ingredients
1.5 cups / 180 gram(s) Chickpea Flour2 large Eggs1 T baking powder1 t Cinnamon, ground .25 t Salt 1.5 cup, mashed Banana, fresh 2 T packed Brown Sugar 2 T Butter, unsalted, melted*2 t Vanilla Extract .75 cup, chopped Walnuts *coconut oil can be substituted for the butter to make it dairy free
Directions
Preheat oven to 350F/175C.

Grease two 4" x 7.5" loaf pans.

Mix flour, baking powder, cinnamon & salt. (Chickpea flour tends to clump, so sifting it first makes it easier to blend.)

In a separate bowl, mix eggs, bananas, sugar, butter & vanilla.

Add wet mixture to dry mixture. Mix until blended & spread into pans.

Bake 35-40 min, or until toothpick comes out clean.
