1 Portabello Mushroom 1 serving cheese, Kraft Italian 5 cheese blend (1 oz or 1/4 cup) .5 tbsp Extra Virgin Olive Oil1 tbs sweet basil salt and pepper to taste6 Tomato, grape 3 jumbo Black Olives Olive oil flavored cooking spray
Preheat oven to 400
Line a baking sheet with foil
Combine tomatoes, basil, salt, pepper and oil in a bowl and set aside, allowing flavors to marry.
Meanwhile, spray mushroom with cooking spray and place on cooking sheet, top down.
Stuff cheese into mushroom. Top with tomato mixture and olives.
Bake until cheese is melted, and mushrooms are cooked to taste.
Serving Size: makes 1 stuffed mushroom
