Mediterranean Salad with White Bean Croquettes and Island Vinaigrette

Ingredients
2 serving White Bean Croquettes 2 cup, shredded Romaine Lettuce (salad) 6 serving Cherry Tomatoes, Fresh, 1 Tomato 115 gram(s) Cucumbers (peeled) 1/2 cup 0.125 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 serving Mezzetta Pitted Greek Kalamata Olives (4 olives in a serving) 1 serving Island Vinaigrette Dressing
Directions
Heat a skillet (cast iron works best but any will work) over medium heat for 2 minutes. Place
the patties in the skillet and cook for 3 minutes on each side, until they are golden brown and
heated through.
Place a generous handful of Romaine lettuce in the center of your plate. Pile on tomatoes,
cucumber, red onion and kalamata olives to your liking. Layer two Croquettes on top then
drizzle with Island Vinaigrette and garnish with some pine nuts.

Serving Size: 1 nice healthy salad
