Baked eggplant with parmesan

Ingredients
8 1 inch round slices of eggplant 8 1 inch round slices of tomato Pam Olive oil spray4 tablespoons balsalmic vinegar 8 tablespoons paremsan cheese
Directions
Preheat over to 350 degrees
Spray glass pan with Pam
Place eggplant slices in pan and bake for 15 mins.
Flip eggplant and spray with Pam - bake for another 15 mins
(less baking time = firmer eggplant so adjust accordingly)

Place tomato slices on top of eggplant and sprinkle vinegar on top. Bake another 10-15 mins
Sprinkle cheese on top and bake for another 10 mins.
