Banana Nut Bread, low fat, no sugar

2 large eggs2 ripe bananas, mashed1/3 cup skim milk1 tbsp vanilla extract 1/4 cup unsweetened applesauce1 tbsp vegetable oil1 cup unbleached all-purpose flour3/4 cup whole wheat flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 3/4 cup pitted dates, finely chopped 1/3 cup sliced almonds
Heat oven to 325 degrees. Lightly oil a 9"x5"x3" loaf pan, or spray with cooking spray. Combine the first six (moist) ingredients, mixing with a fork until fairly smooth. In another bowl, combine the next 5 (dry) ingredients and stir to mix well. Add the moist ingredients to the dry. Stir until blended into a thick batter. Fold in the dates and almonds to distribute evenly through the batter. Turn into prepared loaf pan and bake at 325 degrees 55 to 60 minutes, until lightly browned and a toothpick inserted in the center of the loaf comes out clean. Cool 10 minutes in the pan before turning out onto a wire rack. For best slicing, wait until loaf is completely cooled before cutting.
